Skillet Pork with Rice and Beans
Ingredients
- 2½ pounds boneless pork loin, cut into 1 inch cubes
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons canola oil
- 1 large white onion, chopped
- 2 red bell peppers, chopped
- 2½ cups chicken stock
- 2 jalapeños, chopped
- Half cinnamon stick
- 3 garlic cloves, finely grated
- 1 teaspoon cumin, ground
- 1 (15-ounce) can black beans, rinsed
- ½ pound cherry tomatoes, halved
- 1 cup basmati rice, rinsed
- Lime wedges, cilantro, pickled jalapeños, sour cream and sliced avocado, for serving
Directions
- Step 1 Season the pork with salt and pepper. Heat the oil in a 12-inch cast iron skillet over medium-high. Brown the pork on all sides to give it a deep color, 3 to 5 minutes per side. Transfer to a plate.
- Step 2 Add the onion and bell peppers to the pan. Season with salt and pepper and sauté until just starting to soften, about 5 minutes.
- Step 3 Heat the oven to 375 degrees. In a small saucepan, bring the chicken stock to a boil.
- Step 4 Add jalapeños, cinnamon stick, garlic and cumin to the skillet and cook for about 2 minutes, then add the black beans and cherry tomatoes. Season generously with salt and pepper.
- Step 5 Sprinkle the rice on top in an even layer. Add the stock and return the pork to the pan. Bake, uncovered, for 40 minutes. The stock should be absorbed and the rice should be tender.
