Easy Cheesy Toast and Egg Recipe: How to Breakfast

Our favorite easy breakfast is a cheesy toast and egg recipe. Though it’s less of a single recipe and more of a general idea, and this keeps it fresh every time we make it. Many variations of this breakfast have a cooking time of ten minutes or less and involve very little prep work.

Whether you’re making breakfast for a bunch of people or just yourself, the general concept remains the same because it’s really that simple. The basic ingredients for all of these easy recipes are eggs, bread slices, and your choice of cheese. That’s it! From there, you can make it more complicated or keep it as simple as you like.

There are three main things to consider when choosing a recipe here: how much time do you have for or want to spend on breakfast, what are you in the mood for, and of course, what ingredients do you have on hand?

  1. Toast your bread. Just take a slice of bread and toast it in either a toaster, oven, toaster oven … you get the point.
  2. Melt your cheese of choice on the toast. Obviously, don’t do this part in a toaster.
  3. Cook your eggs in a frying pan. We love over easy for this, but do what works for you.
  4. Put your eggs on your cheese toast and eat!

Egg in a hole recipe

  1. Preheat your oven to 350°F.
  2. Grab a piece of bread and, using a biscuit cutter or cookie cutter, cut a hole in the center of the bread.
  3. Put your bread with a hole on a baking sheet with oiled aluminum foil/parchment paper or a silicone baking sheet.
  4. Crack a large egg into the hole in the bread and season with salt and black pepper.
  5. Bake until you have almost set whites, about 5 minutes.
  6. Sprinkle shredded cheese on top of the egg and bake until melted.

Now let’s add a little complexity! An easy way is by adding bacon and ripe avocados. Both flavors compliment each other very well without much extra work. Also, when we add bacon to these recipes, we love to cook the eggs in the bacon fat. This makes the egg whites get very crispy on the outer rim.

  1. Toast your bread. We love to use English muffins, but you can use whole grain or white bread, sourdough, or whatever you’re in the mood for that day.
  2. While your bread is toasting, cook your bacon. We do this in a cast iron pan.
  3. Melt cheese on one piece of bread and spread mashed avocado on the other with a sprinkle of salt.
  4. Cook your eggs in the same pan after the bacon is done.
  5. Assemble your sandwich and enjoy. Just watch out when you break the egg yolk!

Variations

From here, it’s all about the level of complexity and flavors you’re looking for that morning. This also works very well with any leftover produce in your fridge. Green chilis, fresh herbs, and green onions are all a great option and some of our favorite toppings.

How you make your eggs is up to you as well, and feel free to change this up each time too. We usually fry our eggs in a tablespoon of butter; you can use olive oil or even duck fat. Sometimes we change it up even more and make a soft boiled egg. The runny yolk helps to make a last minute sauce. If you like a firmer yolk, you can try it with a medium or hard boiled egg.

You can even take it in a whole other direction by making an egg mixture almost like you’re making scrambled eggs. To do this, mix your eggs in a small bowl with salt and pepper. Then you can add in any herbs and spices from here, such as garlic powder, nutmeg, or ground sage. We’ve even tried vanilla extract. Cook in a nonstick pan over medium heat, stirring constantly until it’s set.

Sweet or Savory?

Oh the eternal breakfast question: sweet or savory? We typically stick with savory here, but you have many options either way. On the savory side, you could make a spicy mayo or use a little butter. For a sweeter breakfast, you could use jam or even maple syrup.
